Breakfast Confessions of a Not-So Morning Person


"This is the day the Lord has made! Let us REJOICE and be GLAD in it!” Ps. 118:24 

Confession #1: Ever since I can remember, I’ve disliked mornings...just ask my dad! I don’t really “rejoice” and have “gladness” til later in the day. Or at least after my first cup of coffee. Sorry, just the truth. 

Confession #2 (that has really nothing to do with this post, but since I’m confessing): If ever given the opportunity I can’t really sleep past 8. It has something to do with my three offspring, two of which (the ones with curly hair) LOVE mornings, LOVE rising early (like their daddy). 

Confessions #3: I am growing old of hearing, “What are we going to eat?!” especially before the 7 a.m. hour. I’m convinced my hair is graying because of this particular question. Not my lack of availabe hair dye or stress...this question alone!

My new reality: to cook eggs every day would be crazy as we can easily eat 2 dozen in one sitting. These growing kids are eating us out of house and home! Cereal is completely over the top expensive, usually stale by the time it gets to our neck of the woods, thus my “go to” kid breakfast back in the States isn’t justifiable here.

Confession #4: Clearly, I’m not that committed to getting up earlier than I must to work up something lovely like pancakes. 

So...toast it is. Thankfully, my kids are easy to please. 

I’ve been on the look out for breakfast-y recipes and came across a Pop Tart recipe. Hello, what?! I’ve never had a need or desire to even attempt a Pop Tart, but today I gave it a try, using jelly for the filling. Admittedly, they aren’t the prettiest things, as pastry dough and I have always had a misunderstanding, but they are tasty...even without frosting! 

Disclaimer: I had a great intentions of taking step by step pictures but thought better of it after my dough was ugly and I thought, “I can’t post ugly dough.” So here’s the outcome...

It’s already been requested that I make them again and try to different flavors like “normal” Pop Tarts...chocolate or cinnamon and sugar. 

Maybe we’ll just go back to eating toast.
