One advantage of living in a practically perfect climate is the abundance of fresh strawberries we have year round! I usually buy a large bowl full every week for the equivalent of a few dollars. Over the past few months I’ve sought out strawberry recipes and came across a pie recipe that I’ve been asked to share.
You will need:
*A pie crust (If you are on the other side of the ocean, please do yourself a favor and just go BUY one with the cute little dough boy on the front! I will share my pie crust woes another time...)
*At least 2 pints of strawberries, cleaned and topped (I’m not really sure of the exact measurement)
*2 Tbsp. cornstarch
*1 cup of sugar
*1 cup of water
*1/2 package of strawberry gelatin (I don’t really know what this could be?? So I used the closest thing I had which was strawberry jell-o. If there is such a thing at your store, let me know...I’m intrigued what it could be!)
*Whipped topping in a blue and white bowl in your freezer section (I imagine that this, or Blue Bell Vanilla Bean ice cream would make an ideal topping for this beautiful pie!)
Bake your pie shell as directed on the back of the cute dough boy package.
Meanwhile, blend together the cornstarch and sugar then combine in a pan with the water.
Cook until this mixture thickens. Remove from the heat and add your gelatin. Stir until dissolved.
Mix your berries into the mixture and pour into the pie shell.
Refrigerate for a couple of hours. Then add your topping of choice...and maybe a drizzle of chocolate syrup (what??!)...and then share so you don't eat the whole thing by yourself! :)
